SO/ Sotogrande SPA & Golf Resort, the five-star resort located in a privileged lifestyle, is collaborating with the French chef Nicolas Isnard (whose restaurant has a Michelin star). The gastronomic restaurant, Cortijo Santa María, is offering this innovative five course menu for the summer, that can also be accompanied by an exclusive wine pairing.
Guests will embark on a culinary journey, reflecting Chef Isnard’s inspiration and experiences on his many travels, and his unfaltering focus on quality, and respect for local produce and flavours.
This menu begins with a ravioli of oxtail with goat’s cheese emulsion and “ox heart” tomato, followed by mussels in sauce with sobrasada and fresh mint. Then there is a tuna loin ceviche, with avocado guacamole, sesame and combawa ‘lime’.
The menu continues with pork cheek with carrot, kumquat and coriander, and a dessert of roasted figs with sangria and orange foam with saffron.
This summer dining experience is 85€ per person, with the additional option of a wine pairing.
