The lodge is found on the 18th green of the Torrey Pines South Course (once played by previous President Barack Obama). So it presents a prime location for those seeking to practice their swing in the finest of company – this year the same course hosted the US Open providing guests with grandstand views. The onsite restaurant is suitably high-end and the hotel offers delightful extras such as twice-daily guided hikes.

The hotel opened in 1988 but has been modernised many times since. It has two restaurants serving seasonal dishes, two pools surrounded by plush exclusive cabanas and a high tech fitness centre. Its spa treatments take their inspiration from the surrounding land, using indigenous botanicals within the treatments. And guests can join yoga classes or request personal training sessions. Bedrooms exude a typical Palm Springs feel, with polished dark wood, offset by light-coloured soft furnishings.

It has a homely, yet undoubtedly upscale feel. The main house is over a century old, although the internal decor reflects the kind of effortless, contemporary design appealing to New Yorkers heading out of town. As bedrooms take the form of suites and cottages, and there’s no restaurant on the premises, The Roundtree is better suited to families, groups and those preferring to do their own thing when it comes to dining.

(4 stars)Montauk was once populated by creatives, surfers and those who made their living from the water. But it’s becoming increasingly sought after by well-heeled visitors in recent times, with hotels like the Hero Beach Club popping up. The property has a laid back charm though – you won’t find a dedicated restaurant, but you will be provided with complimentary morning bagels and coffee, as well as s’mores roasting on some nights. The design in the 30 bedrooms (most with balconies) is airy and mirrors the natural pastel hues seen in the coastal landscape. Outside, there’s a large heated pool, with plenty of lounging space and movie nights held under the stars.

The property also boasts an outdoor heated pool, a fitness suite, a destination farm-to-table restaurant (with produce coming from its very own on-site one-acre farm), a trendy bar, a curated contemporary art collection, access to a Lexus and a free shuttle, with private beach passes. 22 bedrooms offer Frette linens, iPads and minibars, some have their own gardens and roof terraces. The building itself is a Greek Revival-style mansion, dating back to the 19th century. Topping Rose House is located in Bridgehampton.

Rooms come with sea or garden views and upgraded versions have their own patios complete with fires, private luxury poolside cabanas and two bedrooms.

El Encanto, A Belmond Hotel, Santa Barbara
(5 stars)Run for the hills and you’ll find this Forbes Five-Star luxury hotel up there. It has 92 rooms, including private bungalows. The heated infinity-edged saltwater swimming pool is the ultimate in serenity, with stunning Pacific views (take a look through the hotel’s terrace-based telescope to spot whales and dolphins). An indoor-outdoor restaurant uses fruit, herbs and veg grown in the on-site kitchen garden, cheese made from the resident cow and home-brewed beer and coffee, as well as locally-sourced Santa Barbara delicacies. El Encanto also has a spa, is child and pet friendly and boasts artworks from creators such as Damien Hirst.

(5 stars)Voted the number one resort in the United States by Condé Nast Traveler magazine, Pelican Hill has welcomed the likes of Kate Beckinsale. 332 bungalows and two, three and four-bedroom Tuscan-style villas (the latter provide access to a Villa Clubhouse) are set within over 500 acres of manicured grounds, boasting rattan furniture, wood-beam ceilings, deep soaking marble baths and limestone fireplaces. The dining offer includes Truss, with its signature farm-to-table dishes, a Californian-Mexican open-air eatery and a wine tasting room. There are two outdoor pools one of which is adults only and a programme of activities for younger guests, making it ideal for families wishing to relax together.

(5 stars)First imagined by the French restauranteur Claude Claude Rouas in the 1980s, this was the valley’s original fine-dining destination. Here hotel guests get a taste of Provence, surrounded by US wine country. There are 50 bedrooms at the property ranging from private Maisons to classic rooms. But of course, it’s the culinary offer that is the highlight at Auberge du Soleil. Three and four-course set menus are offered alongside five and six-course tasting menus – these are sensory experiences that excite the pallet. Meals are accompanied by French-inspired cocktails, bubbles from the tableside champagne cart and of course the extensive wine list. There’s also a bistro and bar for a more relaxed approach to mealtime, with stunning sunset views at the end of the day. Auberge du Soleil has been in receipt of a Michelin star for 14 consecutive years.
