Anantara Villa Padierna Palace Presents a Unique Evening Dedicated to Bluefin Tuna, Featuring a Ronqueo by the Sea

This summer, the iconic five-star Anantara Villa Padierna Palace Benahavís Marbella Resort, located between Marbella and Estepona and proudly part of The Leading Hotels of the World, emerges as the culinary jewel of the Costa del Sol. Surrounded by rolling hills, pristine golf courses and breathtaking sea views, this luxurious sanctuary invites guests to an unforgettable evening at By The Sea Beach Club on Friday 11 July, where haute cuisine meets art and tradition.

The night begins at 9 pm with a captivating ronqueo demonstration, the intricate and ritualistic art of filleting a magnificent bluefin tuna from Balfegó weighing over 300 kilograms. Guided by a knowledgeable presenter, guests will discover each prized cut of this majestic fish, learning about its distinct textures, culinary potential, and fascinating secrets. The ronqueo technique takes its name from the distinctive “ronquido” or “snore” sound created as the knife glides along the tuna’s spine, a sound that echoes centuries of tradition.

Following this extraordinary display, guests will savour a bespoke cocktail tasting by the sea. The menu celebrates the bluefin tuna through an inspired selection of dishes crafted to enhance the fish’s flavour, texture, and versatility. The culinary journey features delicacies such as cured tuna ham, assorted gildas, porra antequerana with salted tuna belly, roasted pepper salad with confit galete, pickled tuna “armónica,” tuna meatballs in tomato sauce, tuna croquettes with smoked pancetta, and confit leek with thinly sliced tuna and romesco sauce. All this unfolds against the backdrop of live flamenco, the soothing sound of waves and the gentle Mediterranean breeze.

By The Sea Beach Club will continue to offer these exquisite tuna creations on its menu until 27 July, allowing guests to relish the exceptional qualities of bluefin tuna throughout the summer.
