“Q.B.” stands for “quanto basta” which means “just enough”, a nod to the founder of One Belvedere Tuscany, Natacha Fazal-Karim, and her vision of sustainable hospitality which centres around harmony and giving back to the land. Led by Chef Federico Viti, the restaurant’s mission is to reflect and respect the offerings of the land and pay homage to the culinary traditions of grandmothers and their instinctive approach to ingredients and flavour.
As with all of Natacha Fazal-Karim’s Tuscan ventures, sustainability is key at QB Cucina. The aim is to honour the rich culture and tradition of the region by using ingredients grown on site and in the local area to showcase the delightful, seasonal flavours of Chianti. The restaurant’s eco-conscious ethos strives to minimise waste and nurture its bountiful surroundings while providing an unforgettable luxury dining experience.
Each gastronomic journey at QB Cucina is truly unique thanks to the ever-evolving seasonal menus which focus on crafting traditional dishes with only the freshest of ingredients. Diners are invited to savour an exquisite lunch, with options ranging from à la carte to three- or four-course menus. Evenings offer a refined five-course gourmet experience, alongside an à la carte option. Every dish is born from the culinary vision of Chef Federico Viti and made from produce grown on site at One Belvedere Tuscany farm or sourced from one of the trusted local partners. One Belvedere Tuscany farm uses organic and regenerative practices to provide the restaurant with eggs from their own free range and honey from their colonies while crafting an array of ingredients in-house such as jams and preserves, handmade pasta and bread, as well as infused olive oils and even kombucha.

Diners can opt to complement their premier fine dining experience with carefully selected wine pairings from One Belvedere Tuscany’s own vineyards, and Belvedere 1 Winery, where small-batch wines are produced following an artisanal, low-intervention philosophy and learn about the estate’s history and winemaking process.
