We’re letting you into a dining secret. Although Sal Verde is well known amongst the golfing community of Alcaidesa and Sotogrande, few others know that the Sal Verde Calma bar and Sal Verde restaurant are open to the public – and well worth a visit.
The setting is flawless, with sweeping views over the greens to the sparkling Mediterranean Sea beyond. Soon enough this gem will gain international recognition, as a 5-star luxury Fairmont Hotel is nearing completion next door, set to attract international visitors to this verdant corner of Andalucia.
I recommend starting your visit with an aperitif at the Sal Verde Calma Bar. As the name implies, this architectural bar will immerse you in the calming landscapes of this unspoilt part of the coast, with panoramic views to soak up as you enjoy a drink from the bar accompanied by a snack.
Gastronomy
The main Sal Verde Restaurant is within the clubhouse of the La Hacienda Links Golf Resort, where Chef Ricardo Serrano creates tempting lunch and brunch menus.
Dishes include the outstanding Grilled Artichokes with local Andalusian Poyoyo Cheese (a perfect starter to share), and a comforting Lazy leek Confit and Gorgonzola Tortilla (perfect for a leisurely brunch) and main dishes including Crispy Octopus over Potato Salad, and also an innovative Iberian Pork Shoulder with White Miso glaze and Piquillo Pepper Tartare – so good.
The menu pays tribute to Spain’s culinary heritage with starters of Cantabrian Anchovies, a delicate Scallop Tartare as well as exquisite Tuna belly Tartare. There’s a wood burning oven, where artisan pizzas are prepared, and for main courses there is a choice of fish, seafood and meets from the grill, as well as a special additional weekend menu dedicated to seasonal Chef’s Rice Dishes.
Brunch
This is also a popular Brunch destination, offering tempting menus for just 22 euros with dishes like Salmon and Avocado Toast, and Eggs Benedict, as well as the chance to enjoy handcrafted cocktails too.
