Experimental Group has debuted its highly anticipated flagship, Hotel Experimental Marais, this March. Located in the vibrant Haut Marais district of Paris, the five-star property marks the brand’s third Parisian outpost, joining Grand Pigalle Experimental and Grand Boulevards Experimental. The hotel houses 43 rooms, a spa, a signature cocktail bar, and an ambitious new restaurant – Temple & Chapon – under the direction of celebrated French chef Mélanie Serre.
Founded in Paris in 2007 by Olivier Bon, Pierre-Charles Cros, Romée de Goriainoff, and later joined by Xavier Padovani, Experimental began as a pioneering cocktail bar and has since grown into a globally recognised hospitality group. Returning to its roots, Hotel Experimental Marais brings the group’s signature mix of bold design and immersive experiences to one of the city’s most culturally rich districts.
Acquired in late 2024, the building has been completely reimagined by interior designer Tristan Auer (known for Hôtel de Crillon and Les Bains). Auer has transformed the space into a neo-Gothic gem with vaulted arches, stained-glass windows, dramatic lines and warm, intimate corners. The design narrative is inspired by a fictional globetrotting aesthete whose spirit influences both the interiors and the eclectic decor of the restaurant.

Temple & Chapon seats 100 diners beneath a cathedral-style glass ceiling and is inspired by the lively chophouses of 1950s New York. The menu will feature premium cuts of beef, refined seafood dishes and generous sharing plates – all prepared with French culinary finesse.
Upstairs, the American Bar pays tribute to the Experimental brand’s origins with craft cocktails reminiscent of New York’s most iconic bars. Expect signatures like Benton’s Old Fashioned and vibrant wine selections from California and Oregon.
Spa Experimental, developed in partnership with luxury skincare brand Susanne Kaufmann, offers tailored treatments and an indoor pool, creating a calm retreat in the heart of the city.
