Here the dining, including this new Christmas menu, is designed by Manuel Berganza, executive chef of Azotea Group. and the youngest Spanish chef in the world to win a Michelin star (a milestone achieved in 2014 in New York).
Justa Rufina & Inés Rosales Christmas Menu
Now is the time to embrace the sparkle of December, celebrating life with friends, family, and colleagues.
In collaboration with Inés Rosales, the famous ‘Tortas de Aceite’ made in Andalucia’s capital, this new Christmas menu is designed for groups, and is priced at 50 euros per person, including Albariño & Ribera del Duero wines.
The menu
We begin the festive feast with 5 sharing plates of gourmet Iberian jamón, delicately favoured semi-cured sea bass with almonds, and a delicious tuna tartar, with truffle and ‘Crujío’ cracker base by Inés Rosales. The artichokes with caviar are amazing; and there’s more including clams in saffron and garlic sauce.

One can choose the main dish, either the Turbot with cockles or the aged Sirloin steak with Palermo peppers.
Finally, the sweet touch is a signature ‘lemon pie with Inés Rosales.’
The wines
The generous wine pairing includes D.O. Rueda, Caballero de Olmedo (Verdejo), D.O. Rías Baixas, Froiña (Albariño), D.O. Ca. Rioja, Fescenino (Tempranillo) and D.O. Ribera del Duero, Dominio de la Abadesa (Tempranillo).
Inés Rosales
Seville’s famous bakery Inés Rosales is very much part of the gastronomic heritage of Andalucia.
