Newly launched dining venues that span Hyde Ibiza and neighbouring Mondrian Ibiza, include the modern Japanese restaurant Niko and the beachside Sonrojo, offering Spanish cuisine against a backdrop of Balearic beats. Mondrian Ibiza, the new design-led hotel in Cala Llonga, is now open for its first full season, offering a blend of luxury and culture in one of Ibiza’s picturesque landscapes. This 154-room hotel presents various room and suite types, each extremely stylish and reflecting the local raw materials and locality. Designed by Beades Architects and Cuarto Interior, the hotel also showcases art by London-based collective Gone Rogue and features large glass windows that integrate the surrounding nature. Mondrian’s dining scene has expanded with two new eateries: Niko, a Japanese restaurant blending Japanese and Mediterranean influences, and Sonrojo, a laid-back beachside spot offering Spanish cuisine. There are many different cultural activities and experiences onsite and nearby, making it a vibrant destination for both relaxation and exploration on the White Isle.

While many flock to beachside resorts in Ibiza, the Hotel Mirador de Dalt Vila offers a very different perspective on the island. The 19th-century property is a former Lord’s manor house, tucked into the walled city of Dalt Vila, a Unesco World Heritage site. It was only recently transformed from a residential home into a hotel, with 12 guest rooms located in the main house and in an annex (book the former for original features such as beamed ceilings and wrought iron balconettes). In the main hotel, the leafy rooftop accommodates a 15-metre swimming pool, bar and eatery with Mexican dishes and Wagyu beef. And downstairs there’s the Jara bistro spilling onto Plaza Vara de Rey, with a DJ booth for a funky soundscape. From April to November the hotel is for adults only.

Those seeking an adult-only ambience can book a room at the latest venture from Amàre (the previous one was in Marbella). Sant Josep de sa Talaia is perched on the beach at Bou Cove, where guests have direct access to a dock. Just along from the Palace, is the White Island resort. It’s slightly bigger than its sibling in terms of accommodation with 430, versus 410, bedrooms. As the property is set beside the island’s longest beach on one side and overlooking the Ses Salines Nature Reserve on the other, you can opt for a seafront suite with your own jacuzzi. It offers many similar facilities as the Palace, such as a Zentropia Spa, kids’ activities at the mini club and junior club, a total of ten places to eat and drink and freeform pools fringed with palm trees.
